Dinner from 5/25/11.. sorry didnt take pictures of it

This was so good. My kids loved it and so did I.
Sparkling Beef Tips

The Everything Slow Cooker Cookbook

2 pound chuck roast
2 cups fresh mushrooms, sliced
1 can cream of mushroom soup
1 envelope dry onion soup mix
1 cup lemon-lime carbonated drink

Cut the meat into 1 inch cubes, trimming off the fat as you go.  Clean the mushrooms by wiping with a damp cloth; slice 1/8 inch thick.  Add all ingredients to the slow cooker; mix well.  Cook covered on low setting for 8 to 10 hours



Okay for this recipe I added some garlic powder and used sea salt instead of kosher salt. I also did not use the parmesean cheese as I was out and didnt know it till I needed it. But it was still very good.

Parmesan Roasted Asparagus

2 1/2 pounds fresh asparagus (about 30 large)

2 tablespoons olive oil

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/2 cup freshly grated parmesan cheese

2 lemons cut in wedges, for serving

Preheat oven to 400F. If using thick stalks, peel the bottom half of each one. Lay the asparagus in a single layer on a sheet pan and drizzle with the oil. Sprinkle with salt and pepper, then roast for 15 to 20 minutes until tender. Sprinkle with the parmesan cheese and return to the oven for one minute to melt the cheese. Serve with lemon wedges

Life seems to be so busy anymore

I have seemed to have problems getting on here to post my most recent meals that I have made that I think other will like. I am also teaching myself to sew so that is taking up time too. I will have to start posting pictures of my different creations whether they be cooking, sewing or crocheting related.

Crockpot Pork Chops

Crockpot Pork Chops

Brown 4-6 boneless pork chops
I seasoned with sea salt, pepper, thyme, oregano, parsley, onion powder and garlic powder 
 didn't fully cook them, just browned them some
And throw them in the crock pot
Combine:
1 can cream of mushroom soup w/ roasted garlic
1 can cream of mushroom soup (regular)
1 can cream of chicken soup
1 can (or fresh) mushrooms, I also minced up some fresh garlic
And 1 can of water (from one of the soups)

Mix it all up in a bowl, pour it over the chops and cook on low 6-8 hours.

This is my first time making it so I will definately give reviews. As I found the recipe somewhere else. I changed it a little to season it as I would like it

Busy weekend

The weekend here was busy. I havent had much time to get on here. And I havent tried many new recipes lately. But do need to keep on it. I hope all the moms out there had a wonderful Mothers Day. Here is my Menu for the week of 5/9/11-5/15/11

Monday 5/9: Crockpot Pork Chops (will post the recipe), Mashed Potatoes, vegi
Tuesday 5/10: Beef and Cheddar Sandwiches, homemade French Fries
Wednesday 5/11: Beef Kabobs, cole slaw, pasta salad
Thursday: Tacos
Friday and Saturday: I eat at work
Sunday: Salisbury Steak, Fetticini noodles, vegi

Here is a yummy recipe for Better than Arby's Sandwiches.

I got the recipe for the roast from another lady and it is so good that I had to share it with others

Better Than Arby's Roast Beef Sandwiches

1 beef roast -- 3 to 4 lb.
1/2 cup brown sugar
1 pkg onion soup mix
1/2 cup water
1 chopped onion
1 pinch garlic powder
salt and pepper

You just put a 3-4 lb. roast in the crockpot with 1/2 cup brown
sugar,1 pkg onion soup mix, 1/2 cup water, 1 chopped onion, a pinch
of garlic powder and salt & pepper. You let it cook for 24 hours!
I usually start it after dinner in the evening, then stir it in the
morning. By dinner that night - it's ready! They're great on onion buns!

Linda's notes : Cook on Low in the crockpot. Starting from frozen roast, microwave on high for 10 minutes to heat the exterior of the roast, then place in crock on low for the rest of the day. Worked beautifully.
Here is the Arby Sauce

Copycat Arby's Sauce

Sauce mixture:
1c water
1/2c ketchup
2 tbsp brown sugar
1/4c white vinegar
3 tbsp worchestshire sauce
3/4 tbsp onion powder
3/4 tbsp garlic powder
1/2 tsp paprika
1/8 tsp salt
1/8 tsp cayenne pepper

Cornstarch mixture:
1 tbsp cornstarch
2 tbsp water
---mix the two and set aside..

--Place all sauce ingredients in a blender, blend for 15-20 sec. Pour into a saucepan and simmer on med-loe for 20 mun, stirring frequently. Add cornstarch mixture, stir well. When sauce thickens let simmer on very low heat for 10 min. Remove from heat, let cool and store in a jar in the fridge

Monday 4/18 We are having crockpot Lasagna, salad, and Rolls.
Tuesday 4/19 Soup and Sandwiches on the menu. An easy meal since we have Academic bowl and bow hunters registration
Wednesday 4/20 We will be eating leftover lasagna
Thursday 4/21 Salisbury Steak, Fetticini noodles, and peas
Friday 4/22 Ham and beans with rolls
Saturday 4/23 Pork Chops, mashed potatoes, mushroom gravy, and green beans
Sunday 4/24 Easter dinner with my parents

Ready to see my lil miss

After 2 1/2 weeks I get my KaytLynn back. The house is definately too quiet without her in it. The house has stayed cleaner but I would rather have her here and the mess. I am sure she has grown lots in this time too.

I found out tonight where I can buy the stuff to make my own laundry detergent so when I need more I will go buy what I need and make my own laundry detergent.

It is becoming time to go thru everything and see what I can put in my yardsale I am planning on having over Easter Weekend.

I have my meal plan done for the next 2 weeks so I know what we will be having. Now I have to get my grocery list done so I know what I need to buy at the store. I have almost everything in the house. Just need to get a few things.

Dinner for April 5

I am gonna cook a whole chicken. I will be using a rub for the chicken. I found the rub recipe on another site from a lady that is on the site. Here is the rub recipe:
Barbeque Rub
~*~Sandy~*~

2 cups sugar (I use superfine)
1/4 cup paprika
2 t chili powder
1/2 t cayenne pepper
1/2 cup salt
2 t black pepper
1 t garlic powder

Combine all ingredients and use as a rub for any barbeque meat. Yields about 3 cups.


I will also be making homemade macaroni and cheese. Corn will be the vegi for the night.

Dinner for the week April 4-10

April 4: Salisbury Steak, Mashed potatoes, gravy and sauteed Kale
  • Here is the recipe for the Salisbury steak. I got this from another board I am a part of. I did not use the noodles this time but will next.
  • Salisbury Steaks with Gemelli
    Jamie&kids- Taste of Home
    ·         1 egg
    ·         1/2 cup soft bread crumbs
    ·         1 teaspoon Italian seasoning
    ·         1/2 teaspoon pepper
    ·         1/2 teaspoon minced garlic
    ·         1 pound ground beef
    ·         1 tablespoon olive oil
    ·         1 cup sliced fresh mushrooms
    ·         2 tablespoons all-purpose flour
    ·         1 cup chicken broth
    ·         1 tablespoon ketchup
    ·         1 teaspoon Worcestershire sauce
    ·         Hot cooked gemelli or spiral pasta
    In a large bowl, combine the egg, bread crumbs, Italian seasoning, pepper and garlic. Crumble beef over mixture and mix well. Shape into four patties.
    ·         In a large skillet, cook patties in oil over medium-high heat for 5-7 minutes on each side or until a meat thermometer reads 160° and juices run clear. Remove and keep warm.
    ·         Drain, reserving 2 tablespoons drippings. Saute mushrooms in drippings until tender. Stir in flour until blended. Gradually stir in the broth, ketchup and Worcestershire sauce. Bring to a boil; cook and stir for 2 minutes or until thickened.
    Return patties to the skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until heated through. Serve with gemelli. Yield: 4 servings
For the Kale I just melted some butter and put fresh garlic and mushrooms in, cooked that for a few minutes and then put in the fresh kale. Cooked it to the point of warm and crisp. Didnt cook it for too long as I didnt want it too soft.
